And I always make a fresh salsa, which means I take a 1:2 ratio of tomatillos to tomatoes (and I roast the former on an open fire if available), eyeball garlic (a shit ton), a couple strong jalapeños (roast those bad boys too), and some kosher salt (not too much since you’ll dip salted tortilla chips in this goo) and blend that up in the food processor. Done. Delicious. Simple.
If you're a true tomatohead 🍅 I'd recommend visiting Bulgaria during the summer. The best tomatoes I've ever had, and I live in Spain where people take their tomatoes very seriously.

I know it completely changes the dish - but consider trying a mild tinned fish on top as an option if you want to switch things up. Gives the dish a little more heft.
Also, completely unrelated (and sad, so warning I guess) - we had to put our dog down yesterday as he developed extremely aggressive lymphoma. Any advice on how to cope? Cause I feel like absolute shit. Thanks.
